VEGGIE MEZA

Hi and welcome to our Veggie Kitchen. Summer is here and barbecues are all around. Forget the barbecue and have a great Summer Meza. A Meza can be a huge feast of 40 dishes or a small Meza is perfect with drinks. SMALL MEZA Dishes of Humus, Tahini, Tzatziki (yogurt with finely chopped cucumber mint,garlic granules) Aubergine dip, Avocado dip and salsa. Also dishes of black and green olives, chillies, and crudite (sliced raw vegetables e.g sticks of carrot, cauliflower,celery. Add plenty of Pitta Bread cut into slices ready for dipping. ENJOY with wine and friends. LARGE MEZA All of the above. Plus moussaka, spinach quiche, Halumi grilled, stuffed vine leaves, veggie kebabs (red and green onions, cheese and mushrooms on skewers. BECHAMEL SAUCE (white sauce) FAST METHOD

Hi and welcome to our Veggie Kitchen. We have all tried to make a white sauce the hard way,with a roux. Forget it,our recipe is foolproof. No more lumpy sauce. INGREDIENTS Half a pint of milk (275ml) 1 Tablespoon of plain flour Quarter pint of water (150ml) 2oz Butter (50g) MMETHOD Mix water and flour in a mug until smooth. Heat the milk and butter in a pan until almost boiling. Remove from heat.Add the water and flour and stir. Return to heat stirring all the time. It will gradually thicken. and boil, Remove from heat. Add grated cheese for a cheese sauce. Season with salt and pepper. This sauce is the base for many dishes.

VEGGIE CHRISTMAS MENUS MEZE

Hi and welcome to our Veggie Kitchen. Christmas is coming and forget all the lentils and nut roasts. Instead we suggest a MEZE. a selection of dishes. A small MEZE can be served with drinks and a large MEZE is a feast. SMALL MEZE A selection of dips, eg Humus, Tahini, olives, chillies, crudite (sliced raw veg) and PITTA BREAD. LARGE MEZE All the above plus MOUSSAKA, fried Hulumi, spinach pie or quiche, a large mixed salad Finish with veggie mince pies, Christmas Pudding and cream or brandy butter. ENJOY. AUBERGINE AND POTATO CURRY

Hi and welcome to our Veggie Kitchen. Autumn has turned to winter so this week our recipe is for a warming curry. INGREDIENTS 4 small Aubegines (or 1 large)(cut in rings and fried). 1 Large Potato (cut in 2" squares and boiled) Half an Onion chopped 3 cloves of Garlic crushed or chopped 1 tin of chopped tomatoes (400g) 1 teaspoon Turmeric 1 teaspoon Cumin 1 Large green chilli (or hot red) chopped Half Pint Hot water 1 teaspoon salt 3 tablespoons cooking oil METHOD Heat the oil in a large pan, gently fry onions for 2 minutes, add garlic, add turmeric and stir, add cumin. Add boiled potatoes, stir then add water and stir. Next add chopped tomatoes and stir. Add chopped chilli and aubergines. Add salt. Add a handful of coriander. Simmer gently for 15 minutes, stir occasionally. SERVE with boiled rice and Naan or Pitta Bread.

PASTA BAKE

Hi and welcome to our Veggie Kitchen. We have survived covid, lockdowns, now we are back. PASTA BAKE Ingredients 300g Penne Pasta 200g Grated Cheese Sauce Method Prepare sauce in advance (or buy ready made Tomato & Basil) Cook pasta, 12 to 15 minutes) Drain. In a deep oven dish (3 inches by 12 inches)(8cm by 30cm) layer up. First half the pasta, stir in half the sauce,next half the grated cheese, then a final layer of pasta and sauce. Finally, cover with all the remaining cheese. Bake in oven 200 degrees electric, Gas Mark 6 for 30 minutes. It will be crispy on top. Serves 4 to 6 depending on appetites. ENJOY
